2018 Wychwood Vineyard Chardonnay
A nearly perfect season in 2018 and an impressive performance from the Wychwood vineyard has produced an expressive wine combining elegance, power and distinctive character.
The nose opens with generous notes of pink grapefruit, freshly baked lemon tart and nougat all complemented by succulent acidity typical of the Karridale sub-region. The palate offers intriguing textures from wild fermentation and extended time on fine lees in the finest selection of French oak barriques.
This tiny parcel of Gingin chardonnay is produced with the same care and attention to detail as our single vineyard Chardonnays. Only three barrels produced in 2018.
Made in the same way as our single vineyard Chardonnays. Fruit was hand picked and whole bunch pressed, before undergoing wild yeast fermentation in French oak barriques (25% of which were new). Barrels were left unsulphured till September and some underwent wild malolactic fermentation. Wines were transferred with full lees to tank for extended maturation on full lees. Wine was then clarified and bottled unfiltered in January.
