2018 Rolling Stone

Rolling Stone represents the pinnacle of our red wine production and is the most authentic expression of Hazel's Vineyard. Biodynamic farming, meticulous vineyard management and the utmost attention to detail in the winery all contribute to a wine that speaks of our land. This wine is crafted from select parcels of Cabernet Sauvignon, Malbec, Merlot and Petit Verdot.

97 pts – “78/16/3/3% cabernet sauvignon/malbec/merlot/petit verdot. The best parcels of fruit from the Hazel's vineyard. Matured in French oak for 18 months (40% new). We are coming to the end of the premium 2018 releases from Margaret River, so it is a thrill to be able to taste a few more before the tranche is exhausted. This is closed, restrained and cooling, with layers of graphite tannins and salty mineral acidity ... the fruit is supple and elegant, defined wholly by blackberries, mulberries and raspberry coulis. This has eons left in the tank. It would be impatient of you to drink it earlier than 2025 (we would forgive you if you did though, because it is already delicious)..”

Wine Profile
Tasting Notes
The nose is a display of fragrant violets, cassis and fresh earth, complemented by savoury notes of black olive, bay leaf and dark chocolate. The palate is powerful yet elegant and refined, combining a dense core of blueberries, gravel dust and cedar spice with firm but fine tannins providing impressive length. Made in very limited quantities from selected parcels of fruit, Rolling Stone expresses the essence of this remarkable southern Margaret River vineyard.

Best Cabernet Blend _ Ray Jordan's WA WINE REVIEW
Vineyard
100% Hazel’s Vineyard - certified biodynamic in 2020. Our southernmost vineyard characterised by coarse ironstone gravel loam soil, Southern Ocean breezes, a northerly aspect and plenty of Margaret River sunshine.
Wine Making
Our best parcels of fruit were fermented in open stone fermenters with the use of indigenous yeasts. Some of the wines were left on skins post fermentation for several weeks to provide savouriness and structure to the blend. Others were pressed earlier for freshness and aromatic lift. Each variety was kept separate and aged in the finest selection of French oak barrels for 18-months prior to bottling. The wine remains unfined and unfiltered.
Vintage Report
Preceded by perfect growing conditions in Spring, the 2018 vintage in Margaret River was one of the most classical in recent memory. 20mm of rain at the end of January was well received by our dry grown vineyards. Warm days and cool nights resulted in amazing fruit purity and flavor with balanced acid in our whites. Temperatures warmed up towards the end of March, accelerating the ripening of our reds, giving us incredible flavor concentration with optimal acid and tannin levels. The exceptional quality of our fruit resulting from this vintage has been perfectly reflected in our 2018 wines.
