2018 Rocky Road Cabernet Merlot
Brooding aromas of cassis, violets and after dinner mints. Underlying sweet liquorice, black olives and dark chocolate are complemented by subtle fresh earthy notes. Soft forest fruits fill the palate that abounds with cassis and light mocha elements. The silky mid-palate is supported by cocoa flavoured tannins and sweet spiced oak.
Preceded by perfect growing conditions in Spring, the 2018 vintage in Margaret River was one of the most classical in recent memory. 20mm of rain at the end of January was well received by our dry grown vineyards. Warm days and cool nights resulted in amazing fruit purity and flavour with balanced acid in our whites. Temperatures warmed up towards the end of March, accelerating the ripening of our reds, giving us incredible flavour concentration with optimal acid and tannin levels. The exceptional quality of our fruit resulting from this vintage has been perfectly reflected in our 2018 wines.
Whole berries were transferred by gravity into 5 tonne concrete fermenters. Partial wild fermentation at low temperature followed. Gentle extraction was carried out twice daily. The fruit spent between7 and 12 days on skins to retain vibrancy and freshness before being transferred to 1-2 years old French oak barriques for 14 months.
