Blood orange, black pepper and fresh
raspberry aromas all leap from the glass.
The palate is both savoury and primary. Dark, forest fruit dominates the start, before pepper and wild thyme persist on the finish. Like it’s white stable mate, a perfect food wine.
A blend of Shiraz, Grenache and Mataro, all harvested from the Hazel’s vineyard. The fruit was vinified separately, with wild yeast fermentation in concrete vessels. After two weeks on skins, the individual batches were pressed before blending and spending 9 months maturing in French oak.
