2015 Hazel's Cabernet Sauvignon

The fruit for our single vineyard Cabernet Sauvignon is sourced from an outstanding parcel at our Hazel’s Vineyard in southern Margaret River. Fragrant aromas of wild thyme, violets and black currant are tempered with savoury black olive tapenade, tobacco leaf and a gravel dust undertone. The fleshy palate reveals maraschino cherries, cassis and graphite supported by a framework of firm but fine tannins providing length and definition to the palate.

A purist’s Cabernet; unfined and unfiltered, this is an elegant expression of Hazel’s Vineyard with harmony, balance and integrity.

Wine Making
Single parcels of sustainably grown fruit undergo partial wild fermentation and 14-months maturation in fine French Oak (20% new) and stone vessels with minimal additions. Unfined and unfiltered. This produces an honest wine, combining influences of the site and season to express a unique personality.
Vintage Report
Vintage Notes: Our 2015 harvest at McHenry Hohnen broke records on various fronts. A mild and warm winter in 2014 resulted in a very early bud-break exposing sensitive young shoots to wild early spring conditions. The result was a significant reduction in yields across all varieties particularly Chardonnay which was hampered by wet and windy conditions at flowering. The warm and dry summer that followed with plentiful sunshine and no significant heatwaves set us on the path to two distinct harvest periods for white and red varieties. We experienced our earliest Chardonnay harvest on record with our Burnside, Hazel's and Calgardup Brook vineyards picked and fermenting a full two days earlier this year than our previous start date. While the whites were harvested early a significant rain event mid-February delayed ripening of red varieties however due to low yields the rewards were full tannin ripeness and flavoursome wines. It was a challenging season that saw bushfire smoke, a record number of hungry birds, low yields and significant rain events make for an edge of your seat ride that has produced stunning wines across all varieties albeit on a much reduced volume!
